Rapid economic growth and improvement in the national income have changed social structures, such as the expansion of women's economic activities and the increase of single-person households, which have led to an increase in eating out, processed foods, imported foods and institutional food service. However, environmental pollution due to social change and many kinds of food additives have become a threat to food hygiene and safety, so people’s anxiety about food hygiene and safety has been increasing. Therefore, the importance of purchasing and selecting foods based on knowledge of and information on proper food hygiene a nd safety has emerged. College age is especially important because it is the period when the eating habits of adulthood are formed and settled. The establishment of an awareness level for proper food hygiene and safety can be linked to safe and healthy food selection in adulthood. In the previous study, food hygiene a
nd safety perceptions were surveyed at various ages of elementary, middle, high school, and college aged students, and housewives. However, there is little research on the awareness, knowledge, behavior and educational need of college students in Jeju toward food hygiene and safety. This study aims to investigate the awareness, knowledge and behavior of food hygiene and safety of college students in Jeju, analyze the status of college students’ food hygiene and safety habits, and provide basic data necessary for Jeju students in order to improve efficiently their awareness of food hygiene and safety. We conducted a survey on college students in Jeju from April 2, 2018 to April 28, 2018 and used 400 questionnaires among the retrieved samples as the investigating materials. The data were analyzed using descriptive analysis, chi-square test, t-test, and ANOVA (Duncan), using the SPSS Win Program (version 21.0) The results of this study can be summarized as follows. First, the gender of the respondents were 58.8% female and 41.2% male and 8
3.3% were 20 to 24 years old. In the category of type of residence, “home” was the highest at 64.8%. Respondents from the departments of food science and non -food science 50% respectively. 50.8% of the respondents had no experience in food-related education, and a significant difference was shown in the experience of food-related education according to their experiences of food-related part-time work or their majors (p<0.10). 69.0% of students had experience in food-related part-time work, and 33.0% of students had experience for ‘more than one year’ in food-related part-time work, which was the highest rate in the category of work period. 50.7% of the respondents answered that they had no experience of food hygiene and safety education at work. Second, the degree of concern about food hygiene and safety from the respon
dents was 3.30 out of 5 on average. There was a significant difference in the degree of interest in food hygiene and safety according to the respondents’ majorand part - time experience in food-related fields (p<0.01, p<0.05). Third, the awareness level of food hygiene and safety was 2.74 out of 5 on a
verage. The main reason why respondents reported that they feel unsafe with food was that the production process of food is not reliable, which was how 33. 5% of respondents answered. The degree of awareness of food hygiene and safety was significantly different according to the degree of interest in food hygiene
and safety and the respondents’ major (p<0.01), but there was no significant difference in the experience of food-related part-time work. Fourth, the ease of obtaining information on food hygiene and safety among t
he subjects was 2.99 out of 5 on average. There was a significant difference by the degree of interest in food hygiene and safety and respondents’ major(p<0.01). However, no significant difference was measured based on the experience of food-related part-time work. Respondents acquired information on food hygiene
and safety through media, the internet, and smart phones. Fifth, according to the analysis of knowledge and behavior about food hygiene and safety of the respondents, the rate of correct answers given during a test o
f their knowledge was 80.7%, and the average score given based on their food safety habits was 3.54 out of 5. There was a significant difference in knowledge and behavior about food hygiene and safety by respondents' major and food-rela ted part - time job experience (p<0.05, p<0.01). Sixth, 86.3% of respondents said that it is ‘necessary’ to have education about food hygiene and safety. In addition, 39.7% of the respondents preferred the option to receive training once every six months, 34.8% of whom wanted overall education content related to the prevention of kinds of food poisoning. In the category of education method, crash courses through professional lecturers was highest at 29.9%. ‘Because of low interest’ was the highest reason given at 58.2% among the respondents who answered that they did not need education about food hygiene and safety. Based on the results of this study, it was found that students in Jeju had mo
re experience in food hygiene and safety if they were in food-related departments, and there was a difference in perception, knowledge, behavior, and educational need based on a students’ major. Thus, it should be possible to expand the curriculum on food hygiene and safety, to identify the characteristics of information
media, and to provide information in an efficient manner so that all college students can obtain food hygiene and safety education and related information. Especially, the students of non-food related departments preferred crash courses with professional lecturers in food hygiene and safety education, so customized education should be increased not only in major courses but also in liberal arts classesor crash courses.
Lastly, according to the result of research on the degree of obtaining information on food hygiene and safety by the information media for college students in Jeju, many people obtained information through broadcasting media, internet, and smart phone while the information acquired through print media and food related organizations was significantly less. It seems to be due to the recent increase in college students' use of smartphones, internet, and SNS. Therefore, food-related organizations will need to improve information systems for food hygiene and safety such as smartphone apps and active publicity so that students can get information on food hygiene and safety by using smartphone that can be easily accessed at any time. Also, in order to provide efficient information on food hygiene and safety through print media, various educational materials on food hygiene and safety will to devise ways to attract students' interest.
급속한 경제성장과 국민소득의 향상은 여성 경제활동 확대, 1인 가구의 증가 등의 사회구조를 변화시켰고, 이에 따라 외식, 가공식품, 수입식품 그리고 단체급식의 이용률이 증가하였다. 그러나 사회의 변화에 따른 환경오염과 많은 종류의
식품첨가물 등은 식품의 위생 및 안전을 위협하는 요소가 되고 있고, 이로 인한 국민들의 식품위생 및 안전에 대한 불안감이 증가하고 있다. 이에 올바른 식품위생 및 안전에 대한 지식과 정보를 바탕으로 한 식품의 구매 및 선택의 중요성이 대두되고 있다. 특히 대학생 시기는 성인기의 식습관이 형성·정착되는 시기로, 이들의 올바른 식품위생 및 안전에 대한 의식 수준의 확립은 성인기의 안전하고 건강한 식품선택으로 연결될 수 있다. 기존의 선행연구에서는 초·중·고등학생, 대학생, 주부 등 지역별 다양한 연령을 대상으로 식품위생 및 안전에 대한 인식조사가 이루어졌으나 제주지역 대학생을 대상으로 한 식품위생 및 안전에 대한 인식과 지식 및 행동 그리고 교육 필요성에 대한 연구는 미비한 실정이다. 따라서 본 연구는 제주지역 대학생을 대상으로 식품위생 및 안전에 관한 인식과 지식, 행동을 조사하여 현재 대학생들의 식품위생 및 안전에 관련 실태를 비교·분석하고 그들이 필요로 하는 교육 내용 및 방법을 파악하여 제주지역 대학생의 식품위생 및 안전에 대한 인식을 높일 수 있는 효율적인 개선방안에 필요한 기초자료를 제공하고자 하였다. 제주지역 대학생을 대상으로 2018년 4월 2일부터 2018년 4월 28일까지 설문조사를 실시한 후 회수된 설문지 중 최종적으로 400부를 분석 자료로 사용하였다. 조사된 자료는 SPSS Win (Ver. 21.0) 프로그램을 사용하여 분석하였고, 조사 내용별 분석방법은 빈도분석, 교차분석 (χ2 검정), t-te st, ANOVA (Duncan)를 사용하였다. 본 연구의 결과를 요약하면 다음과 같다.첫째, 조사대상자의 일반사항은 여자가 58.8%, 남자는 41.2%로, 연령대는 20∼ 24세가 83.3%로, 거주형태는 자택이 64.8%로 가장 높았다. 전공 학과는 식품관련학과와 비식품관련학과가 각각 50%였으며, 식품관련 교육 수강 경험 여부는 ‘없다’가 50.8%로 나타났고, 식품관련 교육 수강 경험은 전공학과와 식품관련 아르바이트 경험 여부에 따라 유의적인 차이를 보였다 (p<0.01). 식품관련 아르바이트 경험 여부는 ‘있다’가 69.0%로 나타났고, 식품관련 아르바이트 경험이 있는 학생들의 근무 기간은 1년 이상이 33.0%로 가장 많았으며, 근무지에서의 교육 수강 경험 여부는 ‘없다’의 응답률이 50.7%로 나타났다. 둘째, 조사대상자의 식품위생 및 안전에 대한 관심 정도를 조사한 결과 5점 만점에 3.30점으로 나타났다. 이러한 식품위생 및 안전에 대한 관심 정도는 조사대상자의 전공학과와 식품관련 아르바이트 경험에 따라 유의적인 차이를 보였다(p<0.01, p<0.05).
셋째, 조사대상자의 식품위생 및 안전에 대한 인식 정도는 5점 만점에 2.74점으로 나타났고, 불안하다고 생각하는 이유는 식품의 생산과정을 신뢰할 수 없기때문이 33.5%로 높게 나타났다. 식품위생 및 안전에 대한 인식 정도는 조사대상자의 전공학과와 식품위생 및 안전에 대한 관심 정도에 따라 유의적인 차이를 보였으나 (p<0.01), 식품관련 아르바이트 경험 여부에 대해서는 유의적인 차이를 보이지 않았다. 넷째, 조사대상자들의 식품위생 및 안전에 대한 정보 획득 용이성을 조사한 결과 5점 만점에 2.99점으로 나타났다. 이는 조사대상자의 전공학과와 식품위생 및 안전에 대한 관심 정도에 따라 유의적인 차이를 보였으나 (p<0.01), 식품관련 아르바이트 경험 여부에 대해서는 유의적인 차이를 보이지 않았다. 조사대상자들의 식품위생 및 안전에 대한 정보 매체별 정보 획득은 방송 매체, 인터넷, 스마트폰을 통해 많이 이루어졌다. 다섯째, 조사대상자의 식품위생 및 안전에 대한 지식과 행동을 분석한 결과 지식 정답률은 80.7%로 나타났고, 행동 평균점수는 5점 만점에 3.54점으로 나타났다. 식품위생 및 안전에 대한 지식과 행동은 조사대상자의 전공학과와 식품관련 아르바이트 경험 여부에 따라 유의적인 차이를 보였다 (p<0.05, p<0.01). 여섯째, 조사대상자의 식품위생 및 안전에 대한 교육 필요성에 대한 결과는 ‘필요하다’가 86.3%로 나타났다. 또한 선호하는 교육실시 횟수는 6개월에 1회가 39.7%로 나타났고, 교육내용은 식중독 예방, 종류 등에 관련한 전반적인 내용이 34.8%로, 교육 방법은 전문 강사를 통한 특강이 29.9%로 높게 나타났다. 식품위생 및 안전에 대한 교육이 필요하지 않다고 응답한 조사대상자를 대상으로 그 이유를 조사한 결과 흥미도가 낮기 때문이 58.2%로 가장 높게 나타났다. 이상의 연구결과를 토대로 살펴볼 때 제주지역 대학생은 식품관련학과일수록
식품위생 및 안전에 대한 교육 경험이 많은 것으로 나타났고, 전공학과에 따른 인식, 지식, 행동, 교육 필요성의 차이가 나타났다. 따라서 모든 대학생이 식품위생 및 안전에 대한 교육 경험과 관련 정보를 얻을 수 있도록 식품위생 및 안전에 대한 교육과정을 증가시키고 정보 매체의 특성을 파악하여 효율적인 방법으로 정보가 제공될 수 있어야 할 것이다. 특히 비식품관련학과가 선호하는 식품위생 및 안전에 대한 교육 방법이 전문 강사를 통한 특강으로 나타난 것으로 보아 전공 강의뿐만 아니라 교양수업 또는 특강을 통한 맞춤형 교육이 늘어나야 할 것으로 보인다. 또한 제주지역 대학생들을 대상으로 정보 매체에 따른 식품위생 및 안전에 대한 정보의 획득 정도를 조사한 결과 방송 매체, 인터넷, 스마트폰을 통한 정보 획득이 많은 것으로 나타났지만 그에 비교하여 인쇄 매체, 식품관련 기관을 통한 정보 획득은 현저히 적게 나타났다. 이는 최근 대학생들의 스마트폰을 이용한 방송 시청, 인터넷, SNS 사용의 증가에 기인한 것으로 보인다. 따라서 식품관련 기관에서는 학생들이 언제든지 쉽게 접근할 수 있는 스마트폰을 이용하여 식품위생 및 안전에 대한 정보를 얻을 수 있도록 적극적인 홍보와 스마트폰 앱 등의 식품위생 및 안전에 대한 정보제공 시스템 개선이 필요할 것이다. 또한 인쇄 매체를 통한 식품위생 및 안전에 대한 효율적인 정보제공을 위해 대학생들의 흥미를 끌어낼 수 있는 방법을 고안하여 식품위생 및 안전에 대한 다양한 교육 자료의 제작이 필요할 것이다.
