한·중·일 후발효차 특성 고찰 = Review on the Properties of Post-fermented Tea in Korea, China and Japan

본 연구는 한국·중국·일본의 후발효차의 종류와 생산지역, 제다법 등의 주요 특성을 이해하고, 우리나라에서 새로운 방향으로 나아가야 할 후발효차의 발전 가능성과 방안 연구이다. 이러한 연구 목적을 달성하기 위해 각 나라의 후발효차의 특정 시기를 지정하지 않고, 전체적인 특징을 서술하여, 삼국의 후발효차의 특징을 이해하도록 하였다. 한·중·일 후발효차를 선정함에 있어서는 중국과 일본은 기본적으로 후(미생물) 발효차를 확인하였고 우리나라에서는 전통적 의미의 숙성 후발효차로 분류하여 연구과제로 삼는다.
연구방법은 다양한 제다법이 변화 발전하고 있는 현대의 시점에서 후발효차의 제다과정을 문헌 고찰만으로 파악하는 데는 한계점이 있다. 무엇보다 후발효차는 제다방법, 보관조건과 기간에 따라 품질의 차이가 크고 기호나 평가에 대한 복잡성과 모호함이 많기 때문이다. 이에 따라 이과적 선행연구 결과와 제다 현장에서 확인된 제다법의 특성을 분석하여 후발효차 제다의 변화를 확인하였다.
본 연구의 대상은 미생물에 의해 발효한 후(미생물)발효차이다. 미생물 발효차는 미생물의 발효 정도에 따라서 차의 맛과 향이 결정되기 때문에, 미생물의 역할이 매우 크다. 물론 발효과정은 한 가지 과정으로 진행하지 않고 어느 정도 효소반응에 의하여 찻잎의 성분이 변화됨에 따라 맛, 색과 향기 등이 변화하고 여기에 미생물의 작용이 더해져 고유의 특성을 갖게 된다. 실례로 미생물 작용에 있어서 무엇보다 그 차가 만들어지는 자연환경이 미생물의 종류에 커다란 영향을 주어 국가마다 다른 미생물이 발견되고 있다.
중국에서 전해진 후발효차는 동양 삼국이 서로 상이한 형태로 발전했으며, 국가마다 다양한 역사적 경험에서 형성된 것을 확인할 수 있다. 생산지와 민족의 기호에 따라서 다양한 방법으로 제조되어 다양한 종류가 유통되고 있다. 역사적으로 후발효차는 중국 소수민족에게는 하루라도 없어서는 안 되는 생필품이었으며, 차와 말의 교역이 이루어졌던 ‘차마교역(茶馬交易)’은 유목민 사이에서 후발효차의 중요함이 반영된 것이다. 또한 소수민족의 식생활은 육류와 유제품으로 고지방, 고열량으로 이루어져 있어 후발효차는 건강의 기초가 되었다. 이들의 식생활은 현대인의 건강식품, 건강음료로 적합할 뿐만 아니라 흥미로운 차라고 할 수 있다.
본 연구에서 한·중·일의 후발효차의 범위를 기반으로 연구 대상으로 선정한 차는 다음과 같다. 한국 후발효차는 잎차로 하동 무량원차, 오설록 삼다연과 달빛걷기와 떡차는 장흥 청태전, 하동 알가차, 남원 고려단차이다. 논문 리뷰를 통해 한국 전통 미생물발효차의 미생물 군집분석 결과를 보면 한국과 중국, 일본의 미생물 군집은 서로 다르게 나타난다.
중국의 후발효차는 동양 삼국 중에서 가장 오랜 역사와 전통을 지니고 있으며 매우 다양한 후발효차를 생산하고 있다. 중국의 대표적인 후발효차는 흑차인 호남흑차(湖南黑茶), 운남보이차(云南普洱茶), 호북노청차(湖北老靑茶), 광서육보차(廣西六堡茶), 사천변차(四川邊茶), 안휘육안람차(安徽六安籃茶), 섬서경양복전차(陝西𠗊陽茯磚茶)와 황차인 군산은침(君山銀針), 몽정황아(蒙頂黃芽), 곽산황아 등이다.
마지막으로 일본은 후발효차가 주요 지방에서 특색있게 생산하고 있다. 호기성 발효와 혐기성발효의 2단계는 고치현 고이시차(高知県 碁石茶), 애히메현 이시즈츠흑차(愛媛県 石鎚黑茶), 혐기성 발효차는 도쿠시마현 아와반차(德島県 阿波番茶), 호기성 발효차는 도야마현 바타바타차(富山県 バタバタ茶)이다.
본 연구는 우리나라에서 오랫동안 변하지 않고 지속적으로 생산하고 향유하고 있는 차문화에 대하여 새로운 시각으로 후발효차의 기능성을 활용하는 연구를 시작한 것이다. 무엇보다 기존의 차 생산지가 아닌 문헌을 통하여 찾아낸 곳에서 새로운 제다법으로 생산하고 있는 후발효차에서 한국 후발효차의 발전 가능성을 확신할 수 있었다. 연구자는 실질적인 우리나라 후발효차의 발전방안으로 중국과 일본과는 다른 한국형 후발효 제다법 개발, 다양한 전통 차문화 콘텐츠 확보, 과학적 분석 및 접근을 제안하였다. 하지만 연구 결과 우리나라 후발효차는 아직은 걸음마 단계이고 무엇보다 고품질의 한국형 후발효차를 제조하기 위해서는 성분학적, 기능학적, 그리고 미생물학적 기법을 바탕으로 한 체계적인 연구가 뒷받침되어야 가능하리라 생각된다.
This study aims to understand primary characteristics of Korean, Chinese and Japanese post-fermented tea, including the kinds, production areas and tea manufacture methods and look into the potential for development of Korean post-fermented tea and development plans.
To achieve this study purpose, this study describes overall characteristics of tea culture of each country rather than focusing on a specific time of post-fermented tea to help in understanding characteristics of post-fermented tea in the three countries. For this study, literature, papers and data on post-fermented tea in the three East Asian countries were analyzed, and a combined study on on-site tea manufacture and tea evaluation was carried out.
When it comes to selecting Korean, Chinese and Japanese post-fermented tea, this study basically targeted Chinese and Japanese post(microbial)-fermented tea and Korean traditional post-fermented tea in a modern sense.
There is a limit in studying post-fermented tea only based on a literature review on the manufacture processes at this point in time when diverse tea manufacture methods are changing and developing, since the quality of post-fermented tea highly depends on manufacture methods and storing conditions and terms and even its taste or evaluation varies from person to person, which means it is complicated and ambiguous to judge.
Therefore, this study identified characteristics of tea manufacture methods and changes in tea manufacture of post-fermented tea by analyzing the results of scientific papers and experiment data and researching the present status of transmission of loose tea and solid tea in the areas manufacturing tea.
This study targeted post(microbial)-fermented tea manufactured through microbial fermentation of tea leaves. Because the taste and aroma of post-fermented tea depend on the degree of microbial fermentation, microorganisms play a very big part. Of course, fermentation does not go through only one process and the taste, color and aroma of tea varies depending on ingredients of tea leaves with some enzyme reaction. In addition to this, the action of microorganisms makes tea have its own unique characteristics.
As an example, natural environments of the area manufacturing tea highly influences the kinds of microorganisms and this is why different kinds of microorganisms are found in each country.
Historically, post-fermented tea has been a daily necessity to the minorities living in the backwater of northwestern China and the ‘Tea-Horse Trade’ reflects the impotance of microbial fermented tea between the nomads. Besides, post-fermented tea has formed the foundation of health among the minorities leading a dietary life with high-fat and high-calorie foods, such as meat and milk.
Their dietary life is very similar to that of modern people. Therefore, it is interesting that post-fermented tea is appropriate as healthy food and healthy drink for modern people too. Microbial fermented tea transmitted from China has developed in different forms in the three East Asian countries and been formed based on various historical experiences of individual countries.
Now, many different kinds of post-fermented tea that use many different manufacture methods considering the production areas and the tastes of the people go on the market. While there have been a lot of studies on post-fermented tea in China and Japan, Korea still lacks relevant studies in every respect.
This study targeted the following kinds of Korean, Chinese and Japanese post-fermented tea. The kinds of Korean post-fermented tea analyzed in this study are leaf tea, such as Hadong Muryangwoncha, O'sulloc Samdayeon and Dalbitgutgi, and Ddoekcha like Jangheung Cheongtaejeon, Hadong Algacha and Namwon Goryeodancha. The results of microbial community analysis on Korean traditional microbial fermented tea displayed that there are different microbial communities among Korean, Chinese and Japanese post-fermented tea.
Chinese post-fermented tea has the longest history and tradition among the three East Asian countries and there are many different kinds of post-fermented tea. Black tea, such as Honam black tea(湖南黑茶), Yunnan puer tea(云南普洱茶), Hobuknocheong tea(湖北老靑茶), Gwangseoyukbo tea(廣西六堡茶), Sacheonbyeon tea(四川邊茶), Anhuiyuksanram tea(安徽六安籃茶) and Seomseogyeongyangbokjeon tea(陝西𠗊陽茯磚茶), and yellow tea, such as Gunsaneunchim(君山銀針),, Mongjeonghwangah(蒙頂黃芽) and Gwaksanhwangah are Chinese representative post-fermented tea.
Lastly, distinctive post-fermented tea is produced in major regions of Japan. Especially, Goishi tea of Kochi Prefecture(高知県 碁石茶), Ishizuzu black tea of Ehime Prefecture(愛媛県 石鎚黑茶) are manufactured through aerobic fermentation and anaerobic fermentation, Ahwaban tea of Tokushima Prefecture(德島県 阿波番茶) is manufactured through anaerobic fermentation, and Batabata tea of Toyama Prefecture(富山県 バタバタ茶) is manufactured through aerobic fermentation.
This study was conducted to use the functionality of post-fermented tea, from a novel perspective of tea culture that has been continued with no change for a long period of time in Korea. Above all, this study demonstrates the potential for development of Korean post-fermented tea through post-fermented tea using new manufacture methods in the areas found in literature, not in the existing tea production sites.
This study suggests that for practical development of Korean post-fermented tea, there is a need to diversify tea products, develop Korean post-fermented tea, which is differentiated from Chinese and Japanese post-fermented tea, create a variety of tea culture contents and analyze and approach post-fermented tea scientifically. On the other hand, the study results indicate that Korean post-fermented tea is still in its infancy. It is, therefore, considered that for manufacture of high-quality Korean post-fermented tea, systematic research based on ingredient, functional and microbial techniques should be supported.
