중요도-수행도 분석을 통한 초등학생 급식 만족도 = Elementary School Students' Satisfaction with Their Meal Service through Importance-Performance Analysis

In this study, detailed and in-depth analysis focusing on 4 items such as meal quality, sanitation of foodservice, construction of a menu, and service quality of distribution was conducted to assess the importance and performance for the purpose of investigating the satisfaction of school food service program and thereby providing basic data for understanding problems and tasks of school food service through importance-performance analysis.
To this end, 4 schools for classroom service and 4 schools for restaurant service were selected as subjects of this study, with 100 3rd, 4th, 5th grade boy and girl students from each school. Students were instructed to fill out the questionnaire for themselves, and the questionnaires were distributed by class teachers from Mar. 6 to 19 to 800 students and 782 copies were completed and returned of which 768 copies(98%) were incorporated into statistical processing, except for 14 incomplete copies. The findings of the study are summarized as follows;
1. The average scores were 3.65 for the importance, 3.51 for the performance, and -0.15 for gap index, gap between performance and importance was not big.
2. By category, satisfaction was found to be in the order of meal quality, service quality of distribution, construction of a menu, and sanitation of foodservice in terms of intensity. Especially, all the items of sanitation were found to be higher in performance than importance, which implies that students were not satisfied with sanitation, while the gap between importance and performance of cleanness of plate was found to rank top at -0.79.
3. For the importance by place, classroom service was significantly higher in sanitation of foodservice, construction of a menu, and service quality of distribution (p<0.001, p<0.01, and p<0.05) than restaurant service, and for the performance difference by category, classroom (3.76 points) service was significantly higher (p<0.001) in sanitation than restaurant service (3.53 points). Although there was no significant difference in gap among categories by service place, classroom service was significantly higher (p<0.001) in ‘cleanness of restoration area’, restaurant service was significantly higher (p<0.05) in ‘sanitation of hands’ and ‘service by official menu’ than classroom service, which reveals tasks by service place.
4. Even though there was no significant difference in importance among categories by gender, girl students (3.71 points) were significantly higher (p<0.01) in ‘harmony of side dishes’ than boys (3.51 points). In the area of the performance by category, girls (3.70 points) were significantly higher (p<0.05) in meal quality and sanitation of foodservice than boys (3.60 points), with girls (3.57 points) being significantly higher (p<0.01) in construction of a menu than boys (3.41 points). In particular, girls (3.56 points) were found to be significantly higher (p<0.01) as well in ‘harmony of side dishes’ than boys (3.35 points), which indicates that girls were more sensitive to the category.
5. Findings from importance-performance analysis are as follows:
Common items of A quadrant (Focus here) both in classroom service and restaurant service were ‘cleanness of restoration area’ and ‘accuracy of service time’, and in case of restaurant service, ‘dessert supply’ was found to be important but not effectively performed. For the ‘dessert supply’, the recognition level for its importance was low in the distribution of food in the classroom, and it was positioned in C quadrant (Low priority) where performance was not conducted very well; however, the recognition level for its importance was high in the distribution of food in the school restaurant, but it was positioned in A (Focus here) quadrant where actual performance was low. Meanwhile, for the ‘event meal supply,’ it was positioned in B quadrant (Doing great, keep it up) in the distribution of food in the classroom where its performance and importance were high; however, it was positioned in D quadrant (Overdone) in the distribution of food in the school restaurant where its performance was high and its importance was low. In this regard, it has been found that it was considered more important in the distribution of food in the classroom than in the school restaurant. In terms of the ‘portion size’, the distribution of food in the classroom and in the school restaurant was positioned in C and D quadrant (Low priority, Overdone), respectively, C and D quadrants (Low priority, Overdone) were low in the recognition level for importance; meanwhile, performance was high in the distribution of food in the school restaurant positioned in D quadrant (Overdone), and it has been shown that it was performed better in the distribution of food in the school restaurant than in the classroom.
As a result of importance-performance analysis between girls and boys, ‘cleanness of restoration area’ and ‘accuracy of service time’ were found both in A quadrants (Focus here), girls assessed ‘dessert supply’ and ‘harmony of side dishes’ as important but not effectively performed, which shows than they considered construction of a menu important than their counterparts.
As a result, this study revealed that school food service satisfaction level was lower in sanitation of foodservice than any other category, and specifically in terms of ‘cleanness of plate’, ‘sanitation of meals’, and ‘cleanness of restoration area’, further efforts should be made for improvement. In particular, ‘cleanness of restoration area’ commonly pointed out in the importance-performance analysis should be intensively managed as it is highly critical to enhance stability and satisfaction of school food service. Multifaceted efforts are urgent to improve the quality of school food service for better nutrition of our future generation primary school students.
본 연구에서는 학교급식의 만족도를 평가하기 위한 중요도와 수행도를 분석하여 이들 간의 격자도 분석을 통해 학교 급식의 문제점을 파악하고 개선점을 찾는데 기초 자료를 제공하고자, 설문의 내용을 음식의 품질, 급식의 위생, 식단의 구성, 배식의 서비스 품질의 네 가지 영역으로 세분화하여 심도 있는 분석을 하였다.
조사대상 학교는 직영으로 운영되고 있는 초등학교 교실배식 4개교와 식당배식 4개교를 선정하였고, 1개교에서 100명씩 3, 4, 5학년 남,녀로 구성하였다. 설문지는 담임선생님을 통해 배부 하였고 학생들이 직접 설문지에 답하는 자가기록방법을 사용하였다. 설문지 배부는 3월 6일~3월 19일까지 실시하였고 총 800부 중 782부가 회수되었으며 이 중 불성실한 설문지 14부를 제외하여 768부(98%)를 통계처리 하였다. 본 조사결과를 요약하면 다음과 같다.
1. 전체 평균에서 학생들의 중요도에 대한 인식은 3.65점이나 실제 제공받는 수행도에 대한 인식은 3.51점이며, 갭(gap)지수는 -0.15점을 나타내 수행도와 중요도간의 갭(gap)이 크지 않은 것으로 나타났다.
2. 각 영역별 만족도는 음식의 품질, 배식의 서비스 품질, 식단의 구성, 급식의 위생의 순으로 나타났다. 특히 급식의 위생의 모든 항목이 중요도보다 수행도가 높게 나타나 위생에 대해 만족하지 못함을 알 수 있었고 식판 청결의 중요도와 수행도의 갭(gap)이 -0.79점으로 가장 크게 나타났다.
3. 배식장소에 따른 중요도-수행도 분석의 결과는 다음과 같다. 각 영역별 중요도는 급식의 위생, 식단의 구성, 배식의 서비스 품질에서 교실배식이 식당배식에 비하여 유의적(p<0.001, p<0.01, p<0.05)으로 높게 나타났고, 영역별 수행도 차이에서는 급식의 위생에서 교실배식(3.76점)이 식당배식(3.53점)에 비해 유의적(p<0.001)으로 점수가 높았다. 배식장소에 따른 각 영역별 갭(gap)에서는 유의적 차이를 보이지 않았으나 잔반을 버리는 곳의 청결은 교실배식이 유의적(p<0.001)으로 높았고, 식사 전 손의 청결, 식단표대로 배식에서는 식당배식이 교실배식에 비하여 유의적(p<0.05)으로 높게 나타나 배식 장소별 개선해야 할 사항을 알 수 있었다.
4. 성별에 따른 각 영역별 중요도에서는 유의적인 차이는 없었으나 전체 세부 항목에서 반찬의 조화가 여학생(3.71점)이 남학생(3.51점)에 비해 유의적(p<0.01)으로 높게 나타났다. 영역별 수행도의 결과는 음식의 품질과 급식의 위생에서 여학생(3.70점)이 남학생(3.60점)에 비해 유의적(p<0.05)으로 높았고 식단의 구성에서는 여학생(3.57점)이 남학생(3.41점)에 비해 유의적(p<0.01)으로 높게 나타났다. 특히 반찬의 조화는 수행도에서도 여학생(3.56점)이 남학생(3.35점)에 비해 유의적(p<0.01)으로 높게 나타나 여학생들이 남학생에 비하여 민감하게 반응하는 항목임을 알 수 있었다.
5. 격자도 분석의 결과는 다음과 같다.
교실배식과 식당배식의 A영역(Focus here)에 공통적으로 나타난 항목은 잔반 버리는 곳의 청결과 배식 시간의 정확함이며 식당배식에서는 후식의 제공도 중요하게 생각하나 잘 수행되지 않는 항목으로 조사되었다. 후식의 제공은 교실배식에서는 중요도에 대한 인식수준이 낮고 실제 잘 수행되지 않는 C영역(Low priority)에 나타났으나 식당배식에서는 중요도에 대한 인식수준은 높으나 실제 수행도가 낮은 A영역(Focus here)에 나타나 차이를 보였고, 이벤트 음식의 제공은 교실배식에서는 수행도와 중요도가 높은 B영역(Doing great, Keep it up), 식당배식에서는 중요도는 낮으나 수행도가 높은 D영역(Overdone)에 나타나 교실배식에서 더 중요하게 생각하고 있음을 알 수 있었다. 1인분량은 교실배식이 C영역(Low priority), 식당배식 D영역(Overdone)에 나타났는데 C영역(Low priority)과 D영역(Overdone)은 중요도에 대한 인식수준이 낮은 영역이며, 수행도는 D영역(Overdone)에 해당되는 식당배식에서 높게 나타나 교실배식에 비해 식당배식에서 더 잘 수행되고 있음을 알 수 있었다.
남학생과 여학생의 격자도 분석 결과 공통적으로 잔반 버리는 곳의 청결과 배식 시간의 정확함이 A영역(Focus here)에 나타났고, 여학생은 후식의 제공, 반찬의 조화를 중요하게 생각하나 잘 수행되지 않고 있다고 대답하여 남학생에 비하여 식단영역을 중요하게 생각하고 있음을 알 수 있었다.
본 연구 결과 급식의 위생에 대한 만족도가 가장 낮게 나타났으며 세부 항목으로 식판의 청결, 음식의 위생, 잔반 버리는 곳의 청결이 개선을 위한 노력이 필요함을 알 수 있었다. 특히 격자도 분석에서 공통적으로 지적된 바 있는 잔반 버리는 곳의 청결은 학교 급식의 안전성과 만족도를 높이는데 매우 중요하므로 집중적인 관리가 이루어져야 할 것이다. 초등학생들의 건전한 식생활 영위를 위하여 학교 급식의 품질향상을 위한 보다 다각적인 노력이 필요하다고 생각된다.
