This study suggests the orientation of kitchen space for the aged, as a positive effect of technology and period trend of the 4th industrial revolution on future life. When it comes to the relation between culture and kitchen furniture, the functionalities of kitchen furniture, such as forms or materials, colors and systems have been visualized rapidly in the form of symbols of technologies of the times, whereas forms or functions of kitchen furniture inherited from the culture of the past cannot be easily applied. This implies that although easy technologies of kitchen furniture are developed and it is possible to add new functions, behavioral culture contained in kitchen furniture does not easily change and it is also hard to apply this. On the surface, the functionalities of Korean kitchen have highly varied over time, but the ways of using and living culture contain Korean culture even during the westernization. Modern kitchen is becoming systematized to suit changing functions and home appliances are changing to smart IoT technology-based digital environments. Moreover, future kitchen environments will enable a lot of activities in ordinary life to be done in the kitchen and perform a central role in residential spaces. Kitchen will acquire more diversity to provide multi-functions, such as taking a rest and communicating with families, working, enjoying hobbies and taking care of health. Accordingly, this study aims to make a contribution to improvement in life quality of the elderly through a kitchen space by offering some alternatives for aging, which is a social issue in Korea. The main topic of the study is to combine diverse detailed functions with design elements in the light of the changing characteristics of the elderly and suggest the direction of multiple kitchen space that blurs the functions and boundaries among spaces.
Normally, elderly persons refer to those aged 65 and over, according to the criteria of U.N. However, this study targeted elderly persons aged 55 and over, including the future elderly. For a theoretical consideration, the features of the aged and kitchen space were examine and the latest trends were analyzed. Based on the analysis results, the subjects were monitored through interviews with users and field observations to understand the problems and features of kitchen space. Then design elements were extracted, based on verifications by experts and factor and element-based evaluation indicators were established. After that, there was a survey with users for verification. For the field survey, housing types of the elderly were selected, on the basis of the data released by the National Statistics Office and the researcher visited four houses of elderly persons older than 65 in Choongnam area, who corresponded to the selected housing types. From June 15th to 20th 2019, lifestyles of the aged, their ways of using the kitchen and cooking habits were interviewed for 60 minutes in each house and kitchen environments, structures, kitchen furniture and arrangements were examined and photographed. With regard to design elements, an interview with a group of experts consisting of 9 professors and graduate students (in the doctor’s course or above) was conducted and key words related to this topic were extracted from literature. Then the appropriateness of the key words was verified and preferences for priorities were analyzed from the perspectives of the experts. The survey was executed with 107 elderly persons (aged 55 and over) in Choongnam area. Questionnaires with 54 questions about satisfaction with kitchen furniture and preferences were provided to the subjects face to face, along with additional explanations of the terms and their replies were collected from June 10th to 30th 2019. The data collected were analyzed using the IBM SPSS Statistic 24 Program, which is a authorized statistic program to objectify the analysis results. The problems of kitchen space revealed in onsite visits were associated with worktables of kitchen furniture, storing environments, eating methods of elderly persons, safety, lighting environments and kitchen sizes. As alternatives for these problems, this study suggests four design methods: universal design, smart design, eco-friendly design and food cultural design. Specific elements of kitchen space in universal design include design considering heights of elderly persons in modern times, design considering the use scope of worktables, design considering the use scope of storage closets and design considering the general aged and the wheelchair-bound aged. For the kitchen space of smart design, smart moving design that stresses convenience, smart function that focuses on safety and smart communication environment aiming at a pleasant life can be considered. For the eco-friendly kitchen space, design to save energy in the kitchen space, design considering hobbies to be done in the kitchen space and design using eco-friendly materials can be applied. Lastly, for food cultural design, it is possible to apply design, which gives consideration to the methods of storing kitchen utensils in relation to dietary lives of Korean people, and Korean elderly persons’ ways of eating. Future kitchen for the aged would be equipped with environments that provide convenience, safety, amenity and pleasure. As detailed functions, cooking, eating, taking a rest, enjoying hobbies and health care in the kitchen would be possible and the composition ratios of these detailed functions would vary depending on the generational characteristics of the aged. These might depend on cultural and social influences of the times. In addition, the cooking function in the kitchen would reduce over time. Instead, the function to take a rest and enjoy hobbies would increase and the health care function would be reinforced. With universal design as the center, smart design, eco-friendly design and food cultural design belong to the design elements for establishing these functions and for applying these design elements, there is a need to consider detailed functions, such as kitchen furniture, equipment, environments and appliances. A kitchen space with complex functions can be created in the process in which a variety of functions combine and overlap with one another when the acts of the aged happening in the kitchen interact culturally and functionally. These study results conclude that it is required to design a multiple kitchen space offering diverse functions, including 4 environmental functions(convenience, safety, amenity and pleasure) and 5 detailed behavioral functions(cooking, eating, taking a rest, enjoying hobbies and health care). It is anticipated that this study could be actively used in research and development of public housing for the elderly, research and development of kitchen furniture and research and development of design elements, and make a contribution to a higher level of life satisfaction of the elderly by helping in improving environments of the elderly in the future.
