디저트 소비의 일상화와 디저트 소비상황의 다양화: 발견적 연구설계 = Routinization of Dessert Consumption and Diversification of Dessert Consumption Situations: An Emergent Research Design

이 연구는 디저트 소비의 일상화 현상과 성별/연령대별/직업군별 소비패턴의 차이를 살펴보고, 디저트 소비상황 다양화가 어떻게 구매의욕을 증대시켜 디저트 소비 일상화를 가져오는지 밝히고자 했다. 발견적 연구설계에 따라 설정한 연구문제는 다음과 같다: 1) 디저트 소비는 일상화되었는가? 2) 소비자들이 떠올리는/자주 먹는/선호하는 디저트 종류는 성별/연령대별/직업군별로 어떻게 다르며, 그 사회문화적 의미는 무엇인가? 3) 디저트 소비상황은 얼마나 다양해졌으며, 이는 디저트 구매의욕을 증대시켜 디저트 소비의 일상화를 가져오는가? 4) 디저트 소비상황은 주요구매요인으로도 작용하는가? 연구결과 디저트를 연평균 224.2회 먹을 정도로 디저트 소비는 일상화됐음을 발견했다. 이는 식후와 특별한 날 축하 등의 전통적 디저트 소비상황에 여유/기분전환, 그냥 먹고 싶을 때, 수고한 나를 위한 보상 등 작은 사치 관련 상황들과 배고픔 관련 상황, 타인 관련 상황 등이 추가되면서 다양한 상황에서의 소비로 자기 보상적/자기 표현적/경험적 욕구가 모두 충족되어 소비 만족/행복감이 증대되고, 약간의 죄책감도 극복되어 디저트 구매/재구매가 쉽게 이루어진 결과라고 할 수 있다. 20~50대 남녀 모두 디저트를 좋아하고 자주먹지만, 좋아하는 정도, 먹는 횟수, 가장 자주 먹는 디저트에 성별/연령대별 차이가 있으며, 이는 직업군별 차이를 반영하는 경우가 많았다. 한편, 연구자가 개발한 결정표 형식의 설문조사와 축약 분석을 사용하여, 맛과 가성비는 대개 가장 중요한 구매요인이지만, 인지도는 백화점/디저트 카페에서 중요하고 ‘배고픔/스트레스로 당이 댕김’ 같은 상황적 요인은 편의점/마트에서 중요한 것을 발견했다. 또한, 같은 편의점/마트에서도 당이 댕김/배고픔은 대학생/취업준비생에게 중요하고, 디저트 외관의 아름다움은 여성 직장인과 가정주부에게 중요했다. 이런 연구결과를 토대로 기업들이 4가지 노력을 할 필요가 있다는 제언을 했다: 1) 성별/연령대별/직업군별 차이를 반영한 디저트 개발과 판매 전략 수립, 2) 선호하는 디저트의 소비상황별 차이를 반영한 디저트 개발, 3) 경험수집에서 그치지 않고 장기적 재구매 대상이 될 수 있도록 독특한 외관만이 아니라 맛도 있는 신제품개발 4) 편의점에서의 고급화하고 간편하게 먹도록 포장한 다양한 상품 개발과 디저트 전용 냉장진열대 도입. 한편 지자체 차원에서는 특산 디저트 개발과 관광 자원화를 통한 지역 활성화 노력이 필요하다는 제언을 했다.
더보기This study aimed to examine the routinization of dessert consumption and the differences in the patterns of consumption by gender/age group/occupational group to determine how the diversification of dessert consumption situations increases purchasing incentives and leads to the daily consumption of desserts. The research questions that were set according to the emergent research design are as follows: 1) Has dessert consumption become routine? 2) What types of desserts do consumers recall/often eat/prefer according to gender/age group/occupation group and what is the underlying sociocultural meaning? 3) How diverse has the consumption of desserts become and does this increase dessert purchase intention, thus causing their daily consumption? 4) Does the dessert consumption situation serve as a key buying factor?
This Study found that the consumption of desserts became common enough in Korea to eat dessert on average 224.2 times a year. Desserts have become commonplace as “small luxuryrelated situations” such as relaxation/mood switching, just wanting to eat, and rewards for hard work have been added to traditional dessert consumption situations such as after meals and special day celebrations. In addition, “hunger-related situations” and “others-related situations” have been added as well. As a result, self-rewarding/self-expressing/experiential needs are all satisfied, which increases consumption satisfaction/happiness and overcomes some guilt, making it easier to purchase/repurchase desserts. Both men and women in their 20s-50s love desserts and eat them often but there are differences by gender/age group in terms of their favorite degree, the number of times they eat desserts, and the desserts they eat most often. In many cases, this reflects the differences among job groups. In addition, by using the questionnaire in the form of a decision table and abbreviated analysis developed in this study, “taste” and “cost-efficiency” are found to be usually the most important key buying factors. On the other hand, the degree of recognition is only important in dessert cafes/department stores while situational factors such as hunger or desire to eat sweets due to stress are only important in convenience stores/grocery stores. Even for the same convenience store/grocery store, hunger or desire to eat sweets is only a key buying factor for college students/job candidates. Meanwhile, “the beauty of the dessert and/or its packaging” is the most important key buying factor for female office workers and full-time housewives.
Based on these findings, four marketing proposals are made: 1) Development of dessert and sales strategy that reflects the differences by gender/age group/occupational group, 2) Dessert development reflecting the differences in preferred desserts following situations of dessert consumption, 3) Development of new products that not only have a unique appearance but also are delicious to be targeted for long-term repurchasing without stopping in collecting experience 4) Development of various products that are upscaled and packaged for convenience at convenience stores and introducing refrigerated display racks exclusively for desserts. For local governments, it has been suggested that efforts to vitalize the region through the development of specialty desserts as tourism resources are necessary.
