전통 식생활에 새로운 식문화의 도입으로 일어나는 식생활의 변화는 세계 공통적으로 일어나고 있는 현상이며, 우리나라도 빠르게 변화되어 왔으며 서구화 되어 가는 음식문화가 미래를 살아갈 학생들의 식습관과 식행동에 영향을 미치고 있다. 학교급식은 학생들의 올바른 식습관 형성 및 식생활 태도를 갖게 하며 고유의 음식을 보급함으로써 우리 음식문화를 알릴 수 있는 기회를 제공한다는 의미도 가지고 있다. 이에 학교급식을 담당하는 영양사의 한식 사용에 따른 인식을 조사해 보고 영양소 공급면에서 어떠한 차이가 있는지 조사하여 한식의 개선점을 파악하고 활용을 증대할 수 있는 방안을 찾고자 하였다.
경기도에 근무하는 영양(교)사를 대상으로 설문조사를 실시하였고, 조사학교는 초등학교 95교, 중학교 50교였으며, 한식 사용에 따른 인식조사, 식단 분류, 한식 및 서양식, 동양식, 절충식의 사용 비율을 조사하였으며, 2주간 영양소 공급량 및 평균필요량과 권장섭취량을 조사하였다.
영양사의 일반적 특성에 따른 한식 사용은 초등학교의 경우 연령 41세~50세의 영양사가 한식을 많이 사용하였으며, 30세 미만과 50세 이상의 경우는 한식을 적게 사용하는 것으로 나타났다(p<0.05). 초등학교와 중학교 모두 영양사 경력이 많을수록 한식을 많이 사용하는 것으로 조사되었다(p<0.05). 학교 유형, 학생수, 결혼여부 등은 한식 사용에 특별한 경향을 나타내지 않았다.
한식의 장점으로 초등학교, 중학교 모두 ‘우리 고유의 음식이다’와 ‘우리 입맛에 잘 맞다’고 하였으며, 한식 식단 반영 정도는 ‘평소’에 ‘자주 반영’한다고 하였다. 자주 제공하는 음식의 종류로는 ‘나물,채소류(숙채,생채등)’라고 하였으며 제공하기 어려운 점으로 ‘기호도’가 낮아서이며, 개선점으로 ‘기호도’와 ‘표준조리방법’이라고 하였다. 한식 사용시 가장 많이 제공하는 식단은 김치류, 밥류, 국류의 순이었으며, 부찬류로는 무침류, 볶음류, 과일류의 제공도 한식을 많이 사용하는 초등학교에서 높게 나타났다(p<0.05). 초등학교는 한식을 많이 사용할수록 에너지와 지방량이 낮았으며(p<0.05), 중학교는 한식을 적게 사용하는 그룹이 에너지는 낮았고, 한식을 많이 사용하는 그룹에서 지방량이 낮았다(p<0.05). 한식 사용에 따른 총 열량에 대해 탄수화물, 단백질, 지방으로부터 얻는 에너지의 비율은 초등학교, 중학교 모두 탄수화물이 차지는 하는 비율이 높고, 지방의 비율이 낮았다(p<0.05). 중학교에서 칼슘만 권장섭취량 미만으로 제공하였고, 다른 모든 영양소는 학교급식 영양관리 기준에 의거 제공하고 있었다. 그러나 본 연구에서는 제공된 영양소를 조사한 것이므로 실제 섭취량으로 해석하기에는 제한점이 있으며, 실제 섭취량 및 잔반량 등에 의해 보완되어야 할 것이다.
전통 식생활 유지 측면과 영양면에서도 우수한 한식을 적극적으로 학교급식 식단에 반영하기 위해서는 영양사 간 정보교류 및 조리방법 등을 공유할 수 있는 여건 조성과 학생들의 기도호를 높일 수 있는 레시피 개발 및 표준조리방법 등이 제시된다면 좋은 학교급식 식단으로 활용할 수 있으리라 보며 영양교육을 통해 우리나라 고유의 음식 문화 및 전통 식생활 교육을 실시하여야 할 것으로 사료된다.
Changes in dietary life, due to the introduction of new food cultures to traditional dietary life, is a common phenomenon around the globe. Korea's dietary life has gone through rapid changes as well, and dietary life that is getting westernized is affecting dietary habits and behaviors of the students who will be living the future. School meals allow the students to form proper dietary habits and adopt proper dietary behaviors, and also have a meaning of providing an opportunity to introduce Korea's food culture by distributing traditional foods. Therefore, awareness of the nutritionist who are in charge of school meals, according on the usage of Korean food, was investigated. Also, difference in the nutrition supply aspect was examined, in order to understand suggested improvements of Korean food and discover the plan to make its usage significant.
A survey was carried out by targeting nutritionists working in Gyeonggi-do. Schools surveyed included 95 elementary schools and 50 middle schools. Awareness survey, menu classification, and usage proportions of Korean food, Western food, oriental food and eclectic food were surveyed, and two weeks of nutrition supply quantity, average requirement quantity and recommended intake were investigated. In Korean food usage of nutritionists according to the general characteristics, nutritionists between the age of 41 to 50 used the Korean-style frequently in elementary schools, and nutritionists below the age of 30 and above the age of 50 displayed lesser usage of Korean food (p<0.05). In both elementary and middle schools, nutritionists with more experience were shown to use Korean food more frequently(p<0.05). School type, number of students, marital status displayed no trend when it comes to Korean food usage.
When asked about the advantages of Korean food, nutritionists in both elementary schools and middle schools responded that Korean foods were "our traditional food" and "fit our appetite". According to them, Korean foods were "ordinarily" "often reflected", and "seasoned vegetables, vegetables(steamed vegetables, raw vegetables etc)" were the most frequently served foods. Nutritionists also responded that Korean-style foods were difficult to serve due to low "preferences", and suggested improvements were "preference" and "standard cooking methods". The most frequently served menus were, in order of frequency, Kimchi, boiled rice and soups. Seasoned salads, stir-fries and fruits were served frequently as well in elementary schools with heavy Korean food usage (p<0.05).
In elementary school, energy and fat content were lower as the use of Korean food increased (p<0.05), and in middle school, lower Korean-food usage group showed lower energy, and higher Korean-food usage group showed lower fat content(p<0.05). In the proportion of energy acquired from carbohydrates, proteins and fats with respect to the total calories from Korean-style food usage, both the elementary and middle schools showed a high proportion of carbohydrates and low proportion of fats(p<0.05). In middle school, calcium served was below the recommended intake, and all other nutrients were being served in accordance with school meal's nutrient management standards. However, since this study only examined the provided nutrients, it has a limitation in interpreting them as the actual intake. This research should be supplemented by the actual intake and leftover food.
In order to actively reflect Korean food, which is superior in maintaining traditional dietary life and nutrition aspect, to school meal menus, conditions where nutritionists can share information and recipes must be created, and recipe developments and standard cooking methods that can increase the preference of students should be proposed. With such methods, Korean food can be utilized as good school meal menus, and it is suggested to carry out education on Korea's traditional food culture and dietary life education through nutrition education.
