송대 음다문화(飮茶文化)와 흑유잔 연구 = A study on tea-drinking culture and black-glazed bowls during the Song Dynasty

During the Song Dynasty, the drinking of dancha(團茶), which was produced through refined processing, gained popularity. The dancha-drinking culture became the most opulent tea culture in history. Dancha was typically served in black-glazed bowls, crafted in the kilns of Jianzhou(建州). This paper seeks to examine the evolution of these black-glazed bowls against the backdrop of the Song Dynasty’s dancha and tea-drinking culture(飮茶文化), as well as the contemporary documents and literary records regarding tea.
The 11th-century reign of Emperor Renzong in the Northern Song Dynasty witnessed significant progress in the development of dancha, including the processing of Chai Yang’s (蔡襄) small dragon-phoenix lump tea(小龍鳳團) and the compilation of his work, “Tea Records”(茶錄). Simultaneously, the production of black-glazed bowls, initially limited to some kilns at Anmisan(庵尾山) in Jian Kiln(建窯), expanded across numerous areas, including Daluhoumenshan(大路後門山), Nohwapyeong(蘆花坪), and Wupiryun(牛皮侖). This led to the formation of a prototype of thick black-glazed bowls with a hare’s fur pattern(兎毫文). The distinctive morphology of this era was characterized by bowls having a low body and a widely flared rim. These shapes were probably tailored to accommodate the ‘Tea Spoon’(茶匙), a tool used for whisking tea during the 11th century.
During the reign of Emperor Huizong in the 12th century, the ‘Tea Brush’(茶筅) began to be used for whisking tea. Consequently, the black-glazed bowls of the 12th century were taller and had greater depth compared to those of the 11th century. The widely flared rims, which were previously common features, became narrower to prevent the spilling of tea during the whisking process, and a concave indentation, referred to as a “belly button”(束口), appeared just below the rim. Moreover, many tea bowls were produced in accordance with the whisking method and the ideal characteristics of a tea bowl specified in “Daguan Tea Theory”(大觀茶論), a book authored by Huizong. This included tea bowls with the inscription ‘Gong-eo‧Jin-jan’(貢 御‧進盞), which were bowls characterized by a broad bottom or a wide diameter at the foot.
As the Northern Song Dynasty was replaced by the Southern Song Dynasty towards the end of the 12th century, the hitherto consistent evolution of dancha began to stagnate. It seems that this stagnation also influenced the design of the black-glazed bowls, as no significant changes were observed in their shape from the Southern Song Dynasty through to the Yuan Dynasty. The defining features of this period include a shape with a steep diagonal line, a slightly upright rim forming the belly button, and a sense of depth. The designs are believed to have changed in accordance with the simplified whisked tea method, which became simpler compared to the previous period (Northern Song Dynasty).
Additionally, this paper explored the whisking tea method which is whisked in a large bowl(大碗), bal(鉢) or boon(盆) then served evenly into smaller cups using a ladle(杓). This method may probably prove the use of vessels that are predominantly produced in sizes that are significantly larger (when tea is whisked in a large bowl) or smaller (when tea is served in smaller cups) than the average.
송대에는 정세한 제다 공정을 통해 생산된 단차(團茶)가 유행하며 역사상 가장 화려하고 사치한 차문화의 정수를 이루었다. 이러한 단차와 짝을 이뤄 동시대를 풍미한 찻그릇은 건주(建州)의 요장에서 만들어진흑유잔이었다. 본고에서는 송대 단차와 음다문화(飮茶文化), 그리고 동시대 저술된 다서 및 문헌기록을 바탕으로 흑유잔의 변천 양상을 살펴보고자 한다.
11세기 북송 인종대(仁宗代)는 채양(蔡襄)에 의한 소용봉단(小龍鳳團)의 개발과 『다록(茶錄)』의 집필 등단차의 발전에 굵직한 성취가 있었다. 이에 건요의 암미산(庵尾山) 일부 가마에서 생산되던 흑유잔은 대로후문산(大路後門山), 로화평(蘆花坪), 우피륜(牛皮侖) 등의 일대로 널리 제작되며, 두터운 흑유 표면에 토호문(兎毫文)이 드러난 건잔(建盞)의 전형을 형성하게 된다. 이 시기의 기형은 기체가 낮고 구연이 넓게 벌어지는것이 특징인데, 11세기 격불(擊拂) 도구로 사용된 ‘다시(茶匙)’에 맞추어진 형태로 여겨진다.
12세기에 휘종대(徽宗代)에 들어서면 격불에 ‘다선(茶筅)’을 사용하게 된다. 이에 따라 12세기의 흑유잔은11세기에 비해 기체의 높이가 높아지고 깊이감이 생긴다. 넓게 외반하던 구연은 격불 시 물 넘침을 방지하기위해 짧게 형식화되며, 구연 바로 아래로 오목하게 들어간 속구가 나타난다. 또한 휘종이 저술한 다서 『대관다론(大觀茶論)』에 언급된 격불 방식과 명잔의 조건을 반영하듯 ‘공어‧진잔(貢御‧進盞)’명 잔을 비롯하여바닥 지름이나 기저부가 널찍한 잔들이 다수 생산되었다.
12세기 말 북송이 남송으로 교체되면서 꾸준한 발전을 이루어 오던 단차의 침체가 시작된다. 이 때문인지흑유잔에서도 남송 이후 원대까지 긴 시간 동안 기형에서 눈에 띄는 변화가 보이지 않는다. 가파른 사선을이루는 기벽, 미세하게 직립하며 속구를 이루는 구연과 깊은 복부가 이 시기의 특징으로, 북송대에 비해 간소화된 점다법에 맞춰진 기형으로 생각된다.
또한 평균 크기를 크게 웃돌거나, 작은 크기로만 주로 제작되는 유형들에 대해서는 여러 명이 마실 양의차를 커다란 대완이나 발, 분 등에 넣어 점다한 후, 국자(杓)를 가지고 작은 잔에 나누어 마시는 점다 방식을통하여 살펴보았다.
